At the Home Screen tap the Clock
Tap the Timer icon at the bottom
Set the hour(s), and minutes
Tap When Timer Ends and scroll to the top and select Sleep iPod
Tap Set in the top right corner
Now click Start to begin the countdown
When the countdown ends the iPod touch will stop playing video, music, podcast, or any kind of application you may have open and lock itself.
